For what it is worth, here is a link to some research on the topic: http://faculty.vetmed.ucdavis.edu/faculty/docliver/Research/cuttingboard.htm My interpretation of the research was that plastic boards actually harbour more bacteria than wood boards and are nearly impossible to effectively clean by hand (the bacteria survive in the cuts that knives leave), but that plastic boards can, of course, be sterilized in a dishwasher.
