Here are two more ideas:

Moosewood - Cook for a Crowd (or something like that).  I know I've seen it 
mentioned here.  I've never used it but heard good things - it is all 
vegetarian.

And I found a great web site - www.allrecipes.com  and chickenrecipes.com is 
a subsite of it.  there are thousands of recipes and you can search by 
ingredient, etc.  - there is a place to put in the number you are cooking for 
and it changes the recipe for  you, shopping lists, etc.
I cooked the garlic chicken stew - we used 300 cloves of garlic in a meal for 
30.  It was delicious and the stock made wonderful soup the next day.
