forced vegearianism

I attended the Communities conference last week-end in Yellow Spring, Ohio and attended a great session on sustainability in Cuba. Because of the US embargo and the fall of the Soviet Union, Cuba has no oil to produce energy. Their tractors idle, they now plow their fields with oxen and have made great strides in organic gardening. The average Cuban lost 20 poinds in the first few lean years. Now they eat meat only twice a week but due to their "forced vegetarianism" the rest of the time, they are very healthy and leading a much more sustainable lifestyle. Communities that only have common meals twice a week or so could easily agree to eat vegetarian (which doesn't have to be "starchy") just to simplify things for the cooks and to do their part to eat lower on the food chain. The rest of the week, people can do what they want. Offering vegetarian cooking classes and inviting in ethnic vegetarian cooks to share the secrets of the diet that the majority of the world eats could be quite rewarding.

Often, receipes can be rethought to be vegan. The community could put its heads together and come up with 30 gourmet vegetarian/vegan receipes that meet their dietary needs and not sacrifice a delicious, well balanced meal. Maybe we should learn from Cuba. "Forced vegetarianism" in the common house might not be a bad idea--you can eat meat the rest of the week.

Since the very beginning, we've required new members to complete our
Membership Application.  Because our membership is self selecting, it's
really not so much of an application as it is a checklist of things the
prospective member must do in order to fully familiarize themselves with
what's in store for them at Heartwood.  The checklist requirements on the
application are things such as read the "Cohousing" book, read our
agreements, attend community events, meet members, etc.

website (see link below).
