At Rocky Hill, we went with two high end residential models (GE
Profiles). That gave us four ovens (2 big, 2 small), convection ovens
(2 big), 3 shelves in each big oven and 8 regular burners plus 2
griddle burners. (Both gas).
Seem to work pretty well. I do miss having a large griddle that could be available on a commercial range. The griddles provided are bit small for high volume breakfast cooking.
The price of these two was less than the cost of one commercial style range.
