No I don't have the source anymore, I remember it only because it was not what I expected. The time frame was 48 hours. I also remember it because the people doing the study were also surprised and they could not account for what agent within the wood cutting boards was killing the bacteria. Other sources have posted that they can and do put plastic cutting boards in the dishwasher to sterilize them which would of course trash wood boards. ---------- From: <ez048105 [at] dale.ucdavis.edu> To: Rob Sandelin Subject: Salmonella Date: Monday, May 23, 1994 12:01AM TO: Rob Sandelin From: Greg Jorgensen, N Street Cohousing Your salmonella statistic is quite interesting since many people believe that meat should not be cut on wood boards. Could you emsil me the reference source for the info? Also, it would be nice to know the time frame for "5 times longer". If the time frame is several hours it may not make a difference. Also, do you happen to know how easy it is to wash off the bacteria. Either way, I clean my board (wood or plastic) well after cutting any type of meat. Some of this is out of sensitivity for the resident vegitarians. Thanks, Greg
