Spending 8-10 hours on hard floors in a restaurant kitchen necessitates both
'standing all day shoes' and floors mats.  Although most chefs/cooks also
factor in shoes that can withstand spills, hard things falling and more
things you might not want to think to much about.

Highly recommend the floor mats.

Certainly, wearing shoes made for folks who are on their feet a lot helps a
lot. Not sure why restaurants don't do that - or maybe some do. Best would
be to talk to some professional cooks.
