I absolutely agree with you as a cook re: using gas. As an environmental professional, however, I have to say that as of five years ago, we determined that gas stoves of all kinds, but especially older models, contributed significantly to indoor air pollution -- and this was when they were in good operating condition. I finally traded in my beautiful gas range. I am praying for the day that a nonpolluting model is designed. They are getting better, and I am not completely current. If I have time a little later, I will post the actual data -- unless someone beats me to it.

Several years ago when I visited Pioneer Valley Cohousing, I noticed
that many of the homes had electric ranges in their kitchen. As I
really dislike cooking with electric burners (no instant adjustments
and they don't go off when you turn them off or go on when you turn
them on), and I know most cooks and chefs would never choose
electricity over gas, I inquired about this.  I was told that when
the group was  in discussion about what stove/range would be
"standard" in their units, an indoor air quality expert met with the
group.  Among many other pieces of advice, this person advised the
group that gas ranges contribute significantly to poor indoor air quality.

I had never heard anything about that, nor has it been corroborated
for me since then.  Can anyone reading this listserve shine some
light on this matter?

p.s.  You'll never convince me to give up my gas stove, but I heard a
news report on indoor air quality the other day and my curiosity was
piqued once again.
