Hello,

Here in Belgium food is an important topic (as it probably is in all
countries).
In our group (almost completed and eager to start building next year) we
already fantasise about our common meals and who's cooking team we want to
join inorder to learn a lot from each other.
Our potluck dinners and christmas feasts are some of the most important
social events.

Last summer we visited The Springhill cohousing in Britain. They have a well
elaborated system of recipes for large groups, on plastified sheets.

Recently I found a great choice of cohousing recipes with shopping lists and
complete menu's in different styles (italian, pakistani, mexican, thai,
iranese, and so on) via Coyote Crossing Cohousing, but this morning the link
did not function :

There is a nice weblink about 'Cooking for a crowd' with info, tips on :
http://homecooking.about.com/library/weekly/aa022299.htm?once=true&o
and recipes on : http://homecooking.about.com/library/archive/blmisc54.htm

The recipe for Joani's Killer Tofu Salad (Swan's Market) can be found on
this mailing list :
http://lists.cohousing.org/archives/cohousing-l/msg17788.html

And one of our favorites in 'La Grande Cense' and easy to make :
(i'll try to translate the recipe from flemish)
'Pasta à la Bart' (Cold pasta salad with smoked chicken)
INGREDIENTS (for approx.6 persons)
- smoked chicken filets: 5 filets (or smoked tofu for veggies)
- pasta (large type) 700 g
- dried tomatoes in oil 300 g
- green pesto
- 4 courgettes
- butter with herbs
- pine pitts
- olive oil
RECIPE
Slice the courgettes and bake them slightly in the herbs butter.
Roast the pineapple pitts ; cut the tomatoes and the chicken filets in small
parts.
Cook the pasta ; then mix the pasta with the courgette slices, the pineapple
pitts,
the chicken filet and the tomatoes.
Make a dressing of pesto and olive oil ; mix it in the salad.

And for those who are not stuffed yet, here is 'Bart's chocolate mousse' :
INGREDIENTS :
black chocolate (fondant) 315 g
butter 75 g
egg white from 6 eggs
sugar 130 g
fresh cream 750 g
RECIPE :
Roughly scrape the chocolate and melt it in a pot ('au bain marie').
Whip the cream to 3/4 firmness.
Whip the egg white, at the end add sugar progressively.
Mix the whipped cream, the egg white and the chocolate.
Let it become stiff in the fridge.

Bon appetit,
