Of course you might end up collecting your money from the estate after they die of old age .... That's assuming any work-or-pay provision is carefully worded so that there are no tax liabilities (payroll/income), and you can afford having it come to official attention through a lien - but that's a good idea whether you anticipate it ever coming to that or not.
