We are a small community- 13 adults, 5 kids.  We have 2 weeknight meals a 
month.  What has worked for us if that everyone is required to participate in 
the meal rotation. We generally have a weekly Sunday night meal, and a 
weeknight meal before each business meeting.  People with difficult schedules 
can cook on whatever night works for them, as long as there is enough notice. 
Adults who do not work full time, or have more flexible schedules usually do 
the weeknight meals.  When 9-5ers such as myself do the meal, we usually do 
something very simple like soup or pasta, salad and bread, and do the prep the 
day before.  Crockpot meals work well, and we have a few trusty standards that 
can be prepared in an hour from start to finish.
    I am the meal scheduler. I make sure that any inexperienced or hesitant 
cooks get paired with someone who is more comfortable.Our weeknight meals are 
not anywhere as elaborate as the weekend meals can be, but they are generally 
tasty and it is a great relief not to have to scramble for food before a 
meeting. 
We have a number of major dietary restrictions, and several people were quite 
nervous abut cooking something everyone could eat. Luckily we have a member who 
has dealt a lot with dietary restrictions and has a bunch of cookbooks and 
recipes she has made available to everyone.  We have also taken time on several 
occasions for people to talk about whatever dietary restrictions they may have, 
and ways to accomodate them.  
If you think having a few easy and fast recipes for a large group would help, 
let me know, and I will send you a few favorites.
