It would also be beneficial to get cooking tips, too. Cooking for a crowd
often means organizing your time differently. Some cook books address that
but most don't. How do you manage having a "helper"? How do you handle kids
pitching in? What kind of things can you prep the night before? What things
can you "assembly line". Opening jars/cans, grating cheese, mixing batter,
or cleaning vegetables always seems to take longer than anticipated.

Details like - I've found that a marinade for 6 servings doesn't have to be
tripled for 18. Same with salad dressing.

Time is a consideration, too. If you make enough for your family it takes 10
minutes to assemble a pan of enchiladas. For 35 it may take an hour or more.


And then there's the fact that vegetarian cooking always uses more pots and
pans. How does one use the same water or pan for cooking beans and boiling
noodles?

I always figure that a meal is a success if I'm having a glass of wine with
neighbors in the kitchen 15 minutes before dinner. But I've had those times
when the spaghetti sauce is on the ceiling and the noodles are on the floor.

I would be very interested in collating recipes, once I make it past
midterms.  It would make life so much easier for  people hesitant or
inexperienced with cooking for a large group, and would greatly expand all
of our cooking repertoires.
Any one out there with great recipes- feel free to send to me on or off
list.
