Speaking as a co-ho member, and an ex-restaurant person, the commercial
dishwasher makes the most sense once you cross a threshold of about 20
homes.  In our case, we dedicated a small room to just the dishwasher. 

For Cascadia Commons (Portland OR) we purchased a Jackson which instead of
the 22" square trays, uses an 18" round tray.  The Jackson was designed
for small coffee houses, and can fit a number of our larger pots and pans. 
The small tray size means that m ortals can indeed lift and move the trays
without too much strain, and we purchased the built in metalwork counter
so that trays move right through at counter level.  A cycle takes two
minutes.  The whole picture was several thousand dollars: a used comme
rcial dishwasher, a new heat booster, metalwork, and I have to say that
this setup seems to work pretty well.  It comes up to temperture quickly,
doesn't use any chemicals, and is easy to use.  We fire up the dishwasher
for common meals and partys about t hree times a week and it is not a big
deal, and we do pile up about a tray's worth between meals... not a big
deal with a dishwasher room...
