burrito/taco bar, sandwich bar (with grilled/fried tempeh or tofu salad), mediterranean (baba ganoush, hummos, pita, veggie kabobs, chicken/lamb kabobs, rice, tabouli, etc.)

On occation I cook professionally for group events, and I've found the "bar" approach works great. The only problem I run into is that if I put something out there that is more popular than I anticipated, the folks towards the end of the line miss out and can get a little upset.

Also, its not always easy to anticipate how much meat or veggie protein option to put out - just because someone does eat meat doesn't mean they wouldn't want a grilled tempeh sandwich one night. Plus, when people see a bowl of cooked ground beef they may take a larger portion than they would get if it was part of a dish being served (like a meat lasagna).
