Not sure if you were looking for books or best practices.
Puget Ridge (west Seattle) has an amazing cook book that has recipes for groups 
they've adapted with ingredient quantities based number of servings 20, 30, 40, 
etc.
And Songaia in Bothell, WA has an amazing food program with 5 meals and 200+ 
item pantry (take home what you can) that costs $120/adult/month.
In both cases cook does not shop (that is sep team).
I'd suggest contacting both communities.
Douglas Larson at Songaia loves to talk about their food program.
Not sure the foodie at Puget Ridge.
