Some cohos use the double dishwasher approach (equipment = $1,500, maybe), 
others use the Hobart sanitizer (equipment = appx $4.5K).  Cornerstone has the 
Hobart, mostly because somebody classified us as a “commercial” kitchen, and 
made us get it.  When I moved to Cornerstone nine years ago, I was unfamiliar 
with the Hobart, and somewhat skeptical, but I have long since learned how to 
use it, and I think it works fine as a part of a particular clean-up system.  
For fifteen years, it has been sturdy and reliable, but we have had a couple of 
service calls, one of which was expensive.  Obviously, if either a Whirlpool or 
a Hobart breaks and goes unfixed for many months, there will be problems.

The magic word here is “system”.  Either a dishwasher pair or a sanitizer can 
work well, if employed as tools within a clean-up system that makes use of 
their specific advantages, and compensates for their disadvantages.
