Something to think about: A church architect once told our design
committee not to underestimate the value of a double residential
kitchen. By that he meant a kitchen with two home-size refrigerators,
two home-size ovens, and so on. After looking at the alternatives, the
committee adopted the double residential approach and it has worked
quite well. The cost was relatively low, repairs have been infrequent,
and everybody knows how to operate everything without training.
And the capacity of the double residential kitchen is truly impressive. We have served 400 people in three hours during fund-raisers (with swarms of volunteer who all can work because of thoughtful design for traffic flows, etc.) I'm sure that our double residential kitchen is not the "best" solution in some ways, but it certainly works for us.
