Beverly, I agree that it would be aggravating to go to some trouble to
accommodate someone who could take it or leave it for any kind of dietary
restriction. So far I haven't encountered that, as far as I know, but we
have enough honest-to-goodness gluten avoiders that it wouldn't matter if
one or two people were just trying it out, when that option is offered.

It goes the other way too - I've urged new folks to sign up for GF when I
learned that they really needed to stay off it but they didn't want to
appear overly demanding/fussy to their new neighbors.
