At Ecovillage in Ithaca, we're now looking at kitchen equipment for the Common House. We'd like to hear your input regarding the following: What specific appliances do you have (commercial vs residential, name brand, size, etc)? What kind of stovetops do you have, how many burners, what kind of ovens, what size, how many - same questions regarding refrigerators, freezers, dishwashing systems (under the counter vs on counter)? What kind of places did you go to to shop for these? We'd love to see floor plans for your kitchens, if that's OK. Additionally, we'd like to hear about your systems for the flow of food and dishes in and out of the kitchen. Do you serve buffet style, family style, or a combination of both? Do people bring their dishes to the dishwashing area, or are the dishes loaded on carts? What have you done in the kitchen area that does not work, that we should avoid? What does work well?
