Here's a short list;  some of these speak to landscape design generally, some 
are more philosophical in nature.  The last one is especially for you, Rob:

Thayer, R.L.  1993.  Gray World, Green Heart:  Technology, Nature, and 
sustainability in the Landscape.  John Wiley & Sons.  (deals with site 
planning specifically and has an excellent bibliography)

(there are more recent editions)

I cribbed most of these refs from a friend's landscape architecture course 
syllabus, but I've at least skimmed most of them.  Lots of very interesting 
stuff, usefull especially for those groups who have large sites.
