I don't think that it's too late to change brands.  If you haven't
paid for the equipment in full and you want to switch brands, I'm sure
your dealer will be happy to accommodate you.

You might look into Wolf stoves.  It's been a while since I did
restaurant work, but I saw a lot of Wolf burners in the business.
