At Sharingwood we went with residental quality stoves to avoid the unneeded energy waste and expensive of commercial stoves. We have a six burner stove top that came in two burner sets so it was easy to install far enough apart to put big pots on. (4 gas, 2 electric). The big gas one, 1500 btu heats up big ol pots of water just fine, and the electric is nice for that simmering saute. We have a regular residental exhaust fan that has worked well. We have two stacking wall convection ovens, that work capitally for baked stuff. Where we lack is in refrigeration. We have a recycled, modest sized residental refer and it is not adequate.
