Dear Stella, I was married here, at Cantines Island on november 5!! It was grand, incredibly beautiful. The Friday evening before the wedding I did a favorite feast for everyone: Turkey, cooked very slowly, stuffed with fruit which leaves a lovely gravy juice, and pans and pans of roasted potatoes , sweet and white, and veggies, whatever looks good. The veggies arranged on a platter are gorgeous. also a huge salad, and dessert of store-bought pie, some w'out sugar, heated in oven. Hearing in oven brings up their flavor very much. We had no real vegetarians there, or I'd have also done up some tofu. We have only one oven, and getting enough space for pans of veggies is a real job. We really could use a second oven. The last time I did a feats like this, my 3 neighbor girls helped with vegie cutting, so I'd be free to take them shopping for dresses!! Sorry, can't think of many other successful meals at the moment, but would love this to be an on-going thread here!! Oh yes: I have done frittatta. I don't know if I invented pasta frittata or not, but i've several times had lottsa pats on back for this dish: good pasta, cooked in salted water[!!] is added to sauteed veggies, so the pasta has the veggie flavor, and then scramled eggs are added, and the pan allowed to bake in 325 oven. Have also done veggies, roasted with sauteed tofu. I keep a couple of bricks wrapped in aluminum fioil, "silver paper", as my grandmother called it [!!] , for tofu pressing. tofu really needs to be pressed before marinating. Once it's been pressed , water bled out, it can absorb marinade. well, a longer than expected food ramble!! Ruth Samuels hirsch, Cantines Island Co-ho, sugerties NY...
