Oh, we've talked about this many times, but I'd have to say that I come down
on the side of saving two grand. We've had two dishwashers for many years,
and they are quiet so we can clean up during other events, something which
will happen with frequency. The cook team leaves the dishes in the machines
until the next meal, when they're put back on the buffet.

I am really supportive of your position on making the common house kitchen
accessible and friendly feeling. Here at Jackson Place, I am sorry to say
that I find our kitchen to be less than accessible in a number of ways.

But, the community members who worked on designing our kitchen went for the
commercial dishwasher because they said our common house is classified as a
public building and so we had to have one to meet the Seattle city code for
public kitchens.

Another reason given was that the commercial dishwasher could wash dishes
more quickly and thoroughly than the home models.

Here at Jackson Place we sometimes have 60 people at a meal.

How many people does your community serve at each meal?
And, do you have to run the two dishwashers more than once during clean-up
after a meal?
We probably run the commercial dishwasher 6 or 7 times. Maybe even more.

Even with the commercial dishwasher (and ours uses a strong chemical washing
agent), before putting dishes in, we do need to scrub the goop off and rinse
them a little.  Otherwise, they very often don't come out clean.
