Being the flatware point person for our community, here's what we did.  We
found the largest restaurant supply company in the area, telling them we had
an order that was equivalent in size to a restaurant's.  The sales person
then was able to give us the same discount as a restaurant.  He showed us
many patterns, but then he said he had a deal on a particular line.  It
wouldn't have been our first choice, but it was actually pretty nice.  The
nicest part was the price -- for top quality cutlery, we paid about 80c per
stick.  It ranged from about 60c per spoon to 1.10 per knife.

I don't know how unusual this "deal" was -- I suspect not that unusual.

Other thoughts: to cut corners, eliminate salad forks (we didn't), double up
on spoons (we did).  We got soup spoons -- and use them more than I'd
expected -- good for vegetarian dishes.

Before we found the restaurant supply company, I was looking for an outlet
for used restaurant supply items.  My thinking was that lots of restaurants
fold, so they've got to off-load their stuff somewhere.  Lots of sleuthing
never did turn up a source.  I still think that this could be the least
expensive route to stock your kitchen.

Also consider that browsing in a restaurant supply store is an education
itself.
