Another two cents- As a long time vegetarian, I am wary of leaving things up to cook's choice. There is something profoundly disheartening about going to a meal put on by a friend, community member or family member and finding out that I can eat the bread and the spinach. Most people, especially those with little experience with vegetarians/ vegans/ food allergies, need a little support if they are going to be able to offer an appetizing meal that is outside the bounds of what they usually cook. Encouraging cook teams to include a vegetarian/vegan or someone familiar with vegetarian/vegan recipes, and encouraging the people with special food requirements to come up with a list of easy recipes that everyone can draw from will get better results.
