Yes, it was I who named that gastronomic delight, as we devoured our
sandwiches on the Northern California tour a few years ago.

Try it on lightly toasted sourdough.

I didn't come up with this name.  The person who asked that I post the
recipe on the listserve attended one of the Northern California cohousing
bus tours that I led (and I made the tofu salad too).  Casey (was that Casey
Morrigan from Two-Acre Wood?) is responsible for the name.

Anyhow, so you don't have to look it up  (I've enhanced the recipe a bit
from what was up there before):

Joani's Killer Tofu Salad

Firm Tofu (I get it fresh for $.15 a block--about $.50 a pound--in Oakland's
Chinatown two blocks from my front door!) Mash it up with a potato masher or
squish it up with your freshly washed hands--more fun. Then squeeze it and
discard any water that collects in the bowl Mayonnaise (Vegenaise if you
want it to be vegan) Finely chopped onion or green onion (better for both
flavor and color).
Bragg's Amino Acids--looks like soy sauce, tastes much better (the secret
ingredient for flavor)

You can add chopped parsley or cilantro or extra chopped tops of green
onions for color and a little extra flavor. You could also put chopped
celery in it for more crunch and bulk.
