Clean up has not been an issue here in Nevada City. Officially, the cooks are in charge of clean up. I like this because those who make big messes are also on clean up, and those who clean up as they goŠ get the benefit. But we also have a culture of people jumping in to help a little with clean up which can make it much easier. That way I can help a little or a lot if I have time, but not feel guilty if I don¹t have time. People bus and wipe down their own tables.
