I remember how struck I was the first time I set the tables for a CH dinner. At 
that point, it was customary to put out napkins, tableware, and a glass for 
each seat. Having set many, many tables in my life, I had given up on putting 
all that extra stuff on the table years before and gone to buffet-style 
serving. 

I complained about the extra work but set to my task. I was quickly corrected 
and told this was a forks only meal.
