 And to answer Kathleen‘s question, we have 25 to 35 eaters a night. We have 
seen that in other communities where there is larger number of household there 
are still only 30 to 40 people at their meals.

[How do your cooks handle dietary restrictions (not simply likes and dislikes) 
in terms of extra work and cost? We have members whose diets are vegan, 
vegetarian, gluten free, sugar free, keto, plus folks with allergies to nuts, 
schrooms, shellfish, tomatoes, etc.

Joyce-
We have vegans, gluten intolerance, dairy-free,, no stone fruits, peanut- free 
meals.
We have folks that have sensitivities to beans, artichoke hearts and uncooke 
carrots.

We have found that people are pretty inventive, and can accommodate most diets 
when we know what they are. In the attitude of delicious and nutritious for 
everyone, we have a good variety of meals. To the point about the Asian 
stirfry, we do a lot of Buddha bowls, taco bars, potato bars, bibimbap. Meals 
where there is a grain or starch base, and people can add the toppings that 
they like, that goes over very well with kids and grown ups
