In our classification we were lumped in kitchen classification with churches and community centers rather than (god forbid) restaurants. Since we are using HOME appliances we are under home regulations. We are building our setup with the plumbing capacity and electrical capacity for handling commercial grade appliances (mainly a floor drain for the dishwasher and some other plumbing stuff and wiring stuff, but in the application we listed and will use *(at first )home appliances. We just got our building permit yesterday!!! and so we are in good shape as long as what is on the plan is what we do. We may actually install a home dishwasher, get inspected, then rip it out and install the commercial dishwasher after inspection. They didn't care about the refrigerator only the stove and dishwasher. I think we will eventually follow Puget Ridges set up and get a large Jenair gas cooktop. This is top of the line HOME appliances and should serve our needs well. PS - I am pretty sure we have never told the County, nor do we intend to, that we actually use this kitchen to serve food for the community on a regular basis. They see our commonhouse as a condo clubhouse for parties and such. Much easier to let them believe that. The last thing we want is weekly health dept. inspections or some other crap.
