Hi,

Here at Humboldt State University we have a very large vermicompost
operation that takes care of the food waste from the cafeterias. I don't
know which technology you're currently using or anything about Earth Tub,
but I do know that the large bin system here had problems until they dealt
with two things: getting a grinder to turn the big chunks into worm-edible
mush and adding more dry material so the worms didn't drown in the wet
muck.

Since those issues were dealt with, the system has been working (for a
couple of years now), and I'd be happy to provide you with contact info
for the manager of the system if you think that would be any help.
