Real commercial stoves are a huge danger to the children of your community. 
They are not insulated and will burn anyone who touches them when the oven is 
on.

You're not building a commercial kitchen. You're building a place that should 
feel like home, and be reasonably safe for children, old people and the 
disabled. (hey, we're all temporarily abled, right?)

The main thing with a stove is BTUs. You want a high-end stove for at least one 
of your stoves because otherwise you'll be waiting an hour for water to boil in 
a big pot.
