Please where do you get the info that they are not insulated? This is not what 
I'm finding in my research on the web. It would make no sense at all to have an 
uninsulated oven due to problems with heat evenness and energy waste. Also, it 
would result in restaurant kitchens being intollerably hot since the ovens are 
on all the time. Perhaps some cheaper models aren't and some are?

Real commercial stoves are a huge danger to the children of your community. 
They are not insulated and will burn anyone who touches them when the oven is 
on.

You're not building a commercial kitchen. You're building a place that should 
feel like home, and be reasonably safe for children, old people and the 
disabled. (hey, we're all temporarily abled, right?)

The main thing with a stove is BTUs. You want a high-end stove for at least one 
of your stoves because otherwise you'll be waiting an hour for water to boil in 
a big pot.
