Yes. That's true. I contacted our public health dept (a combined city/county dept here) and they said we fell under NO commercial codes. We did install a grease trap (on advice of our kitchen consultant) as it would pay for itself probably on the first visit from a plumber.

You may not have a choice.  We designed a residential kitchen for our
CH, but were required by the town to install a commercial range hood
and commercial grease trap (!) as though we were a restaurant.  Find
out what the boards/inspectors in your town are likely to do before
settling on your final budget.
