Also check with building dept. Lots of kitchens don't fall into health dept 
codes, but bldg code still req's commercial hood... And it's a BIG dollar 
number. It's a problem we dance around all the time - i'm in architecture. 
Different jurisdictions have different levels of strictness on this topic.

Yes.  That's true.  I contacted our public health dept (a combined  
city/county dept here) and they said we fell under NO commercial  
codes.  We did install a grease trap (on advice of our kitchen  
consultant) as it would pay for itself probably on the first visit  
from a plumber.
