We have a simple vertical-rod-type holder for a roll of paper towels. Each bathroom also has two frequently-laundered cloth towels. We saved a whole lot of paper towel use when we stopped stocking them in the kitchen. We have a deep drawer full of clean cloths and towels for kitchen use. Such cloths are only used at one meal. (OK sanitation buffs - we at least did away with dish sponges, instead getting a stack of launderable dish-washing cloths.)

As we don't have space to let all our sanitized dishes air dry, we have white flour sack towels (always taking a fresh one) for a last whisk on dishes so they can be stacked and the tray cleared. To keep those towels from being used for counters or such, the bin of white dish towels is on the clean-dish trolley itself, on a lower shelf. There are red towels and rags for use on floors, as well as a rag tub, in addition to the drawer of general kitchen towels.

The bathroom towels are unique in color, so don't get mixed with kitchen ones.
