I have actually never used a microwave -- I've perfected the art of stove
top cooking using one pan for most meals -- but I asked a physicist about
this issue. It was a long time ago and I don't remember the details but from
his perspective analyzing the type of heat and the much small time the food
is exposed to the heat, microwave cooking was much less likely to alter the
chemical quality of the food or the environment. Apparently the good old
fashioned over also has a physical dynamic that most of us take for granted.

In another discussion on disposable diapers the same has been found to be
true -- disposables mean far fewer diapers used and less diaper rash for
babies.

I'm not intending to start the same old arguments again, just to point out
that sometimes there are counterintuitive factors to consider.
