At Westwood, we used Tectum as our roof material. The inside layer is woven wood fibers that absorb noise very well, the middle layer is several inches of foam insulation, and the outer layer is plywood sheathing for roofing to be applied on top. It's a stress-skin panel that holds in heat well, too, especially combined with our radiant floor heating.
