The work system at Ecovillage/Frog is team-oriented (Cooking, Meal Cleanup, Finance, Outdoor, CH Cleaning, Maintenance, Process/Steering). These are thought of as the "core" work that everyone should participate in to sustain the community (2-4 hours per week suggested). I think most people here do some kind of mix of "core" and other work, e.g. committees, special projects, web editing, bulk food ordering, etc. I'm guessing the overall average is closer to 2 hours/week per adult, and there's always more "diversity" of contributions than you'd ideally want. Each team has its own system of organizing itself, e.g. the Cook Team meets monthly or so to do scheduling, whereas the Cleanup Team has a "permanent" weekly roster that only changes on an as needed basis. When someone gets tired of doing one type of work, they are free to look for another team that can use help. This system has worked surprisingly well given there is no "top level management" to balance the workforce among teams - things just seem to work out.
