We've been doing 3 meals/week for 6 years. Only rule is there must be a vegan option. Menu is otherwise left to cooks' discretion. Several residents have dietary restrictions like wheat/mushrooms/etc, so often smaller amounts of these "customized" entrees are made also (e.g. a small vegan lasagna to go with a large vegetarian lasagna). We also do a "kids table" with plainer kid-friendly foods. I'd guesstimate that meat is offered at roughly 10% of the meals. Probably half of our residents are vegetarians. I think most residents are satisifed with our common meals (at least the food part - noise/chaos is a different issue).
