At Village Hearth in Durham NC, we decided to go with two residential 
dishwashers and it has worked well for us. Most of our large pots are 
hand-washed after the meal, which is not a big job. We are a 28 unit 
community with 34 residents. We usually have 20 - 24 people coming to 
dinners. You are a small community. How many people attend meals on 
average? You might get by with one residential dishwasher and a bit of 
supplemental handwashing.
