Ken, I’d like to add my thanks.  We’d also appreciate being able to see your 
guide.  

I’d also like to mention that we have an excellent consultant on all-electric 
commercial kitchens, Chris Galarza, whose firm is Forward Dining Solutions.  
Chris is a chef who helped develop the demonstration all-electric kitchen for 
the organic restaurant at the Falk School of Sustainability here in Pittsburgh. 
 He now consults all over the country and is known as one of the experts on 
all-electric commercial kitchen design and operation.
